Search for the best burger in Riyadh and you will find many lists and more opinions. We do not put ourselves at number one. Here is exactly what is in the Marble Burger, and the verdict belongs to whoever eats it. The burger is one of the dishes that became a Marble signature, alongside the brisket and the ribeye.

The Marble Burger: what is inside

Its description on our menu, as written: 180g of our prime-cut blend in a brioche bun with caramelised onion, cheese and Marble sauce, finished with seared edges.

Each part has a job. The beef is the base. The brioche bun is soft, made with butter and egg, so it holds the juice without falling apart. The caramelised onion is cooked slowly until it turns sweet and brown, answering the salt of the beef. The cheese melts over the hot patty. The sauce finishes it.

A burger is simple in its parts, which is why every mistake shows. Beef with too little fat dries out on the fire, a weak bun falls apart under the juice, and too many toppings bury the taste of the meat. So we keep the toppings few and leave the beef in front.

The blend: two prime cuts

On our menu, prime cut means a cut of high quality. The Marble Burger's beef is a blend of two of them, not a single cut.

Why two? Burger makers generally blend more than one cut because each brings something different: one gives a clear beef flavour, another gives the fat that keeps the juice in on the grill. The blend balances them, so the burger is neither dry nor heavy.

A burger, like a steak, answers to the fire. High heat builds the crust outside, and a short time keeps the juice in the centre. That is why a burger is cooked fast and served straight off the fire, before the bun cools or the patty dries.

On our menu every cut of meat passes through the chef's hands before the fire, and the burger is no exception. The standard is the one we use for steak: marbling before weight, provenance before price, judged by Chef Abdulrahman Alsowailem, a member of the International Beef Evaluation Committee.

The seared edges and Marble sauce

Crisp edges come from the beef meeting high heat: a dark brown colour and a thin crust form along the rim. That crust is the Maillard reaction, the same one that gives a steak its crust and bread its colour. In a single bite you get the crisp edge and the soft centre together.

Marble sauce is the sauce that finishes the burger. If you like it, it is on the sauces list to order on the side with any dish.

So what makes a burger high-end? Not its size, and not the number of toppings. It means good beef, a bun that holds it, and sauces made in the same kitchen. At Marble our sauces are made in the house, including Marble sauce and the herb sauce we make every day.

Single, double, triple

The Marble Burger comes in three sizes: the single at 180g, the double at 360g and the triple at 540g. The blend is the same; what changes is the amount of beef. The single is a meal for one, the double is for those who want more beef in every bite, and the triple is for those who arrived truly hungry.

The Au Jus Burger and the Spicy Beef Burger

Two other burgers are on the menu for something different. The Beef Au Jus Burger is a 150g grilled beef patty with American cheese on a brioche bun, finished with onion au jus, and comes as a 300g double. Au jus is French for “with its juice”, the stock that comes out of the meat as it cooks.

The Spicy Beef Burger is a beef patty in a brioche bun with creamy chilli mayonnaise, aromatic chilli oil and rocket shoots, and also comes as a double. The chilli oil is made in Marble's kitchen with ginger, garlic and Korean chilli flakes.

The burgers and tacos section of our menu also has the Korean Taco: Korean-spiced tenderloin on a corn tortilla baked over the flame, with cheese foam and Japanese pickled mushroom. It comes as one taco or two.
