Marble is a Riyadh steakhouse that cooks over an open fire of samar wood and charcoal. It won Best Steakhouse at the FACT Dining Awards Riyadh in 2023 and 2024, and is No. 12 on the Middle East & North Africa’s 50 Best Restaurants 2026.
The cuts on our menu
Ribeye Steak: 350g seared over samar wood, served with caramelised lemon and salt flakes.
Prime Rib: 400g of ribeye over wood, with mashed potato, mushroom sauce and fried kale.
Filet Mignon: 200g grilled over wood, with grilled asparagus and crisp potato skins.
Miso Steak and Ponzu Steak: 200g of striploin, the first over charcoal with miso cream, the second over the flame with ponzu and green onion.
How we choose a cut
Marble is named after marbling: the fine fat inside the meat that melts over the fire and gives a cut its flavour and tenderness. So every cut is chosen for its marbling first, by Chef Abdulrahman Alsowailem of the International Beef Evaluation Committee.
The fire
We cook over samar wood and charcoal, never gas. The wood gives the steak its light layer of smoke; the charcoal gives the high heat for the crust.
