Why we named it Marble

Marbling: the fine streaks of fat inside the cut. Our name is not decoration — it is a standard we answer to every day.

Open any fine cut and you will find them: thin white threads running through the meat like the veins of marble stone. That is marbling — and it is what melts over the fire and gives the meat its flavour, tenderness and juice.

When we chose the name in 2018 we were not looking for a pretty word; we were looking for a standard. Marbling before weight, provenance before price. Every cut that enters our kitchen is measured against it, by a member of the International Beef Evaluation Committee.

The name carries a second meaning we love: marble endures. We do not chase trends and we do not touch what our guests love. Our menu is short on purpose, and every dish on it has earned its place.
